Garbanzo Beans or Chick Peas~whatever you call them, what’s not to love about them?
Ok, to be truly honest with you, I really never liked beans of any sort…except maybe the occasional green bean! I have really grown a liking to beans…at least most of them. I am still a work in progress!
I have had garbanzo beans on salads many times…and they are quite good. I love them made into hummus, I have even roasted them with some pure maple syrup and make them quite sweet and tasty! So what’s the deal with these cute little beans?
If you ate just 1/2 cup of garbanzo beans each day, in as little as a week, your blood sugar will be easier to handle and better under control! Yes, only 1/2 cup! Did you know that 1 cup of garbanzo beans contains 12.5 grams of fiber? The recommended amount of fiber we should get each day is just 25 grams! In as little as 1 cup a day, you are getting 1/2 of the fiber you need per day, and that is the insoluble kind of fiber…insoluble fiber stays intact until it gets to the lower part of the intestines, the colon. This will help lower your risk of colon cancer.
To increase your consumption of garbanzo beans, you really must try this fantastic “Mock” Tuna Salad. This recipe was created by one of my most favorite cookbooks…by Happy Herbivore! You must check out her book…she will be coming out with a new cookbook in December!
