Squash~such a funny name for an even funnier looking vegetable. Butternut is most likely the squash that you know best! But, let’s not stop at Butternut…there are many other types of squash out there, give them all a try, you just might find a gem!!
Did you know that almost every part of the squash can be eaten? Neither did I!! The leaves and the shoots can be sauteed up or folded into omletes or soup.
There are so many varieties of squash, but I will focus on the most popular. Acorn, Ambercup, Autumncup, Butternut, Buttercup, Carnival, Delicata, Pumpkin, Hubbard, Kobacha, Spaghetti, Sweet Dumpling, and Turbin. Oh yeah, we cannot forget our friend the Zucchini!! I have come to really like the Spaghetti squash, once the squash is cooked, you can take a fork and pull out the insides which will look just like noodles and can replace noodles!!
Don’t be intimidated by this funny looking little vegetable. Give them a try. Squash can be baked, mashed, fried, frozen, used in soups, pies, smoothies…almost anything! Nutritious and delishous! Low in calories, sodium, fat free!!
