If you like mushrooms…I believe you will LOVE this gravy. Over a bed of potatoes, you will not miss the meat~at all!!
Here’s the recipe:
16 oz sliced mushrooms (cremini are best…meaty texture and flavor)
1 small onion, diced
2-4 tsp non dairy butter (ie. Earth Balance)
2 cups vegetable broth (I used no-chicken broth)
2-3 tbsp flour (rice flour, whole wheat flour)
2 tbsp soy sauce (or Tamari)
1/2 tsp thyme
pepper to taste
Melt butter in pan, add onion until it becomes translucent (about 5 minutes). Add mushrooms, continue cooking for an additional 5 minutes. While that is cooking, mix together in a bowl the broth, flour, soy sauce, thyme and pepper. Whisk together. Once it is no longer lumpy, add it to the mushroom and onion mixture. Once it thickens, enjoy it over mashed potatoes…Enjoy!
This sure is a great replacement for cream of mushroom soup in recipes!!
