It’s That Time of Year~Pumpkin Time!!

Oh the glorious Autumn days!  I LOVE Autumn.  The beautiful colors of the leaves before they fall to the ground, and the soft fluffy white stuff comes around.

Along with the beautiful colors and the crisp cool days and evenings, those round orange gourds are everywhere.  The kids love pumpkins around Halloween time, they love carving out faces and designs in them.  As well as the fun time carving those pumpkins, pumpkins are great to cook with and bake with.

Pumpkin Pie smoothies are one of my kids favorite smoothies.  Here’s a great recipe!

1 Banana, 1/3 cup canned pumpkin (not the pumpkin pie filling), 1 tsp pumpkin pie spice, 1/4-1/2 cup dairy free milk…or water, 1-2 tsp pure maple syrup.  Place all ingredients in blender and blend together with some ice….Enjoy!!!

Oh yeah…Pumpkin Roll.  Who can forget?  Super yummy!!  I don’t have a great recipe for pumpkin roll…yet!!  Do you have any suggestions?  Please send me some of your recipes so I can try them all out!!  And of course we also cannot forget the fantastic staple of Thanksgiving…Pumpkin Pie!!  Who can resist?   Did you know….the largest pumpkin pie ever made was over 5 feet in diameter, and weighed over 300 lbs.  It took 80 lbs of cooked pumpkin, 36 lbs of sugar, 12 dozen eggs and it took over 6 hours to bake!!
